Udida Ghari This is a split skinless black gram or dhuli urad dal dumpling which is similar to the popular medu vada. This is the way the Konkani people make the gharis which are served with cup of hot coffee. Crisp and flavourful they are a delight to eat. By Sanjeev Kapoor 04 Aug 2024 in Recipes Snack New Update Udida Ghari Main ingredients Split skinless black gram (dhuli urad dal), Red chilli powder, Turmeric powder, Cumin seeds, Crushed black peppercorns, Asafoetida, Curry leaves, Oil Cuisine Konkani Course Snack Prep time 5-6 hours Cook time 10-15 minutes Serve 4 Taste Savoury Level of cooking Easy Others Vegetarian Ingredients 1 cup split skinless black gram (dhuli urad dal), soaked for 5-6 hours and drained 1 teaspoon red chilli powder ½ teaspoon turmeric powder 1 teaspoon cumin seeds ½ teaspoon crushed black peppercorns ¼ teaspoon asafoetida (hing) Salt to taste 12 curry leaves, shredded Oil to deep fry Green chutney for serving Method Transfer half the drained dal in a blender jar. Grind to a coarse paste and transfer into a large mixing bowl. Transfer the remaining dal in the same blender jar. Add 5 tablespoons water and grind to a smooth and fluffy batter. Transfer into the same bowl and beat well with hands. Add red chilli powder, turmeric powder, cumin seeds, crushed black peppercorns, asafoetida, salt and curry leaves and mix till well combined. Heat sufficient oil in a kadai. Slide in small portions of the ground batter and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper.
