Sweet And Sour Lychee Chicken

Sweet and Sour chicken is quite a popular dish so, let us give it a seasonal twist and add some sweet and flavourful lychees. Trust me, you are going to love it!

Ingredients

  • 300 grams boneless chicken thighs, cut into 1 inch pieces
  • 12-15 lychees, peeled, pitted and vertically halved
  • Salt to taste
  • 1 tablespoon grated ginger
  • 2 tablespoons finely chopped garlic
  • 2 tablespoons oil
  • 2 spring onion bulbs, sliced thinly
  • 1 fresh red chilli, finely chopped
  • 2 tablespoons tomato ketchup
  • 1 teaspoon soy sauce + to serve
  • 2 tablespoons honey
  • 1 tablespoon white vinegar + to serve
  • White pepper powder to taste
  • 2 tablespoons corn flour slurry
  • 2 tablespoons chopped spring onion greens + for garnish
  • Burnt garlic fried rice to serve
  • Chilli vinegar to serve

Method

  1. Take chicken thighs in a large bowl, add salt, ginger and 1 tablespoon garlic and rub the mixture well on to each chicken piece and set aside to marinate for 15-20 minutes. 
  2. Heat oil in a non-stick wok, add remaining garlic, and sauté for 1 minute on high heat. 
  3. Add spring onion bulbs, mix and saute on high heat for 1 minute. Add fresh red chilli, mix and sauté on high heat for 1 minute.
  4. Add marinated chicken, mix and saute on high heat for 3-4 minutes.  
  5. Add tomato ketchup and soy sauce and mix well. Add honey, mix and cook for 1-2 minutes.
  6. Add 1 cup hot water and mix well. Add lychees, mix well and cook for 1-2 minutes. 
  7. Add white vinegar and mix well.
  8. Add white pepper powder, adjust salt, and mix well and let the mixture come to a boil. Add corn flour slurry, mix and cook till the mixture thickens slightly.
  9. Add spring onion greens and take the pan off the heat. 
  10. Transfer the mixture into a serving bowl, and garnish with spring onion greens. Serve hot with burnt garlic fried rice, soy sauce and chilli vinegar.
