Ingredients
- 300 grams boneless chicken thighs, cut into 1 inch pieces
- 12-15 lychees, peeled, pitted and vertically halved
- Salt to taste
- 1 tablespoon grated ginger
- 2 tablespoons finely chopped garlic
- 2 tablespoons oil
- 2 spring onion bulbs, sliced thinly
- 1 fresh red chilli, finely chopped
- 2 tablespoons tomato ketchup
- 1 teaspoon soy sauce + to serve
- 2 tablespoons honey
- 1 tablespoon white vinegar + to serve
- White pepper powder to taste
- 2 tablespoons corn flour slurry
- 2 tablespoons chopped spring onion greens + for garnish
- Burnt garlic fried rice to serve
- Chilli vinegar to serve
Method
- Take chicken thighs in a large bowl, add salt, ginger and 1 tablespoon garlic and rub the mixture well on to each chicken piece and set aside to marinate for 15-20 minutes.
- Heat oil in a non-stick wok, add remaining garlic, and sauté for 1 minute on high heat.
- Add spring onion bulbs, mix and saute on high heat for 1 minute. Add fresh red chilli, mix and sauté on high heat for 1 minute.
- Add marinated chicken, mix and saute on high heat for 3-4 minutes.
- Add tomato ketchup and soy sauce and mix well. Add honey, mix and cook for 1-2 minutes.
- Add 1 cup hot water and mix well. Add lychees, mix well and cook for 1-2 minutes.
- Add white vinegar and mix well.
- Add white pepper powder, adjust salt, and mix well and let the mixture come to a boil. Add corn flour slurry, mix and cook till the mixture thickens slightly.
- Add spring onion greens and take the pan off the heat.
- Transfer the mixture into a serving bowl, and garnish with spring onion greens. Serve hot with burnt garlic fried rice, soy sauce and chilli vinegar.
