Ingredients
- ½ cup cumin seeds
- 12-15 cloves
- 2 inch cinnamon
- 15-20 black peppercorns
- 1 star anise
- 1 teaspoon fennel seeds (saunf)
- 1 teaspoon dried mango powder (amchur)
- Black salt to taste
Method
- Heat a non-stick pan, add cumin seeds, cloves, cinnamon, black peppercorns and star anise and dry roast till fragrant. Take the pan off the heat and allow to cool slightly.
- Put this mixture into a grinder jar. Add fennel seeds, dried mango powder and black salt and grind to a fine powder. Let the masala cool down to room temperature
- Transfer into an air tight container and use as and when required.
