Ingredients
- 4 medium sweet potatoes, peeled and grated
- Oil for deep frying
- 1 cup raw peanuts
- 30-40 curry leaves
- 10-15 green chillies, slit
- Rock salt to taste
- 2 teaspoons red chilli powder
Method
- Heat sufficient oil in a kadai, and deep-fry grated sweet potatoes in two lots. Drain on absorbent paper.
- Deep-fry raw peanuts in same oil till golden brown. Drain on another absorbent paper and set aside.
- Deep-fry curry leaves and green chillies in the same oil and drain on the same absorbent paper as the peanuts.
- Transfer all the ingredients into a large mixing bowl, add rock salt and red chilli powder and toss well. Allow to cool completely.
- Transfer into a serving bowl and serve or store in an airtight container and serve as required.
