Ingredients
- 1 cup creamy peanut butter
- 1 tablespoon lemon juice
- 1 tablespoon soy sauce
- ¼ cup coconut milk
- 1 tablespoon sugar
- Salt to taste
- Crushed black peppercorns to taste
- 2-3 tablespoons olive oil
- 2 cups shredded cabbage
- 1 medium carrot, peeled and cut into thin strips
- 1 cup shredded purple cabbage
- 1 medium green capsicum, cut into thin strips
- 1 medium red apple, peeled and cut into thin strips
- Roasted and coarsely crushed peanuts for garnish
Method
- Put peanut butter in a blender jar, add lemon juice, soy sauce, coconut milk, sugar, salt, crushed black peppercorns and olive oil and blend till smooth.
- Take cabbage in a large bowl, add carrot, purple cabbage, green capsicum, red apple and the blended paste and mix well.
- Transfer into a serving bowl, garnish with crushed peanuts and serve immediately.
