Peanut Slaw

Ingredients

  • 1 cup creamy peanut butter
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • ¼ cup coconut milk
  • 1 tablespoon sugar
  • Salt to taste
  • Crushed black peppercorns to taste
  • 2-3 tablespoons olive oil
  • 2 cups shredded cabbage
  • 1 medium carrot, peeled and cut into thin strips
  • 1 cup shredded purple cabbage
  • 1 medium green capsicum, cut into thin strips
  • 1 medium red apple, peeled and cut into thin strips
  • Roasted and coarsely crushed peanuts for garnish

Method

  1. Put peanut butter in a blender jar, add lemon juice, soy sauce, coconut milk, sugar, salt, crushed black peppercorns and olive oil and blend till smooth. 
  2. Take cabbage in a large bowl, add carrot, purple cabbage, green capsicum, red apple and the blended paste and mix well.
  3. Transfer into a serving bowl, garnish with crushed peanuts and serve immediately.
