Ingredients
- ¼ cup cumin seeds (jeera)
- 10-12 black peppercorns, coarsely crushed
- 3-4 cloves
- ¾ cup + 1 teaspoon sugar
- ½ inch ginger, roughly chopped
- Black salt to taste
- Salt to taste
- ¼ teaspoon + 4 pinches of chaat masala
- A pinch of red chilli powder
- 2 lemon wedges
- 2 medium lemons halved
- Ice cubes as required
- Drinking soda as required
Method
- Heat a non-stick pan, add cumin seeds and dry roast on medium heat till they turn dark brown.
- Remove 1 tablespoon cumin seeds and add black peppercorns and cloves, mix and dry roast for a minute.
- Add ¾ cup sugar, 1 cup water and ginger, mix well and cook till sugar dissolves and the mixture thickens.
- Strain the prepared jeera syrup into a bowl and set aside to cool down completely.
- Transfer the reserved roasted cumin seeds into a mortar. Add ½ teaspoon black salt, ¼ teaspoon salt, ¼ teaspoon chaat masala, red chilli powder and remaining sugar and crush coarsely with a pestle.
- Rub lemon on the rim of each serving glasses and press into the prepared spice mix.
- Pour a portion of the prepared syrup into each glass. Add black salt, salt and a pinch of chaat masala and squeeze the juice of ½ lemon into each glass and mix well.
- Add ice and top up with the soda and stir. Serve chilled.
