Madras Onion Pickle

Madras onions or shallots are delicious, flavourful and mildly sweet variant of onions. This pickle is a great way of preserving them and it also works as a great accompaniment.

Ingredients

  • 1½ cups peeled madras onions 
  • ½ cup mustard oil
  • 2 teaspoons red chilli powder
  • ½ teaspoon turmeric powder
  • 3 teaspoons lemon juice
  • Salt to taste
  • 2 teaspoons coarsely crushed fennel seeds
  • 6 tablespoons split fenugreek seeds (methi na kuria)
  • 1 tablespoon split yellow mustard seeds (rai na kuria)

Method

  1. Heat mustard oil in a pan till it begins to smoke, then switch the heat off. Allow to cool completely.
  2. Take madras onions in a large bowl, add red chilli powder, turmeric powder, lemon juice and salt and mix well. Add crushed fennel seeds and mix again. Set aside to marinate for 2-3 hours. 
  3. Add split fenugreek seeds and split yellow mustard seeds and mix well. Add the cooled mustard oil and mix well. Transfer into an air tight jar, cover and keep it in sun for 7-8 days. 
  4. Use as required.
