Kaddu Halwa

Ingredients

  • 2 cups grated red pumpkin (kaddu)
  • 2 tablespoons ghee
  • 1½ cups low fat milk
  • ½ teaspoon green cardamom powder
  • ½ cup chopped jaggery
  • 2-3 tablespoons chopped cashewnuts + to garnish
  • 2-3 tablespoons slivered almonds
  • 2-3 tablespoons blanched, peeled and slivered pistachios + to garnish

Method

  1. Heat ghee in a non-stick kadai, add pumpkin and saute for 8-10 minutes on medium heat.
  2. Add milk, mix well, cover and cook for 5-6 minutes more.
  3. Add green cardamom powder and jaggery and mix well till jaggery dissolves.
  4. Add cashewnuts, almonds and pistachios and mix well.
  5. Transfer into individual small bowls, garnish with cashewnuts, pistachios and serve.
