Ingredients
- 2 cups grated red pumpkin (kaddu)
- 2 tablespoons ghee
- 1½ cups low fat milk
- ½ teaspoon green cardamom powder
- ½ cup chopped jaggery
- 2-3 tablespoons chopped cashewnuts + to garnish
- 2-3 tablespoons slivered almonds
- 2-3 tablespoons blanched, peeled and slivered pistachios + to garnish
Method
- Heat ghee in a non-stick kadai, add pumpkin and saute for 8-10 minutes on medium heat.
- Add milk, mix well, cover and cook for 5-6 minutes more.
- Add green cardamom powder and jaggery and mix well till jaggery dissolves.
- Add cashewnuts, almonds and pistachios and mix well.
- Transfer into individual small bowls, garnish with cashewnuts, pistachios and serve.
