How To Boil Mutton

Mutton should be cooked properly to help break down collagen, fibers and connective tissues. When boiled properly with the right ingredients mutton loses its meaty odour as it absorbs the flavour of the ingredients it is boiled with.

Ingredients

  • 750 grams mutton, cut into 2 inch pieces on the bone
  • 1 bay leaf
  • Salt to taste
  • ¼ teaspoon turmeric powder
  • 2-3 green cardamoms
  • 2-3 cloves
  • 8-10 black peppercorns
  • 1 teaspoon oil

Method

  1. Take mutton in a bowl, add bay leaf, salt, turmeric powder, green cardamoms, cloves and black peppercorns and mix till well combined. 
  2. Heat a pressure cooker, add the mutton, drizzle oil and 1 cup water and mix well. Cover with lid and cook on medium heat till 4 whistles are given out.
  3. Open the lid of the cooker once the pressure has reduced completely. Mix the mutton mixture once.
  4. You may discard the whole spices and use this boiled mutton for various recipes.
