Ingredients
- 250 grams cluster beans (gavar), stringed and ends trimmed
- Salt to taste
- 2 tablespoons oil
- 5-6 garlic cloves, sliced
- 3-4 spring onion bulbs, sliced
- Crushed black peppercorns to taste
- ½ teaspoon light soy sauce
- ½ teaspoon vinegar
- 1 teaspoon toasted sesame oil
- ½ teaspoon red chilli flakes + to sprinkle
- Toasted white sesame seeds to sprinkle
Method
- Heat sufficient water in a deep non-stick pan, add salt and cluster beans and blanch for 4-5 minutes. Drain and transfer in chilled water.
- Heat oil in a non-stick pan, add garlic and sauté till light brown.
- Add spring onion bulbs, mix and sauté for 1 minute.
- Add blanched beans, salt and crushed black peppercorns and mix well.
- Add light soy sauce, vinegar, toasted sesame oil and red chilli flakes and toss well.
- Transfer into a serving bowl, sprinkle red chilli flakes and toasted sesame seeds and serve.
