Gavar Stir Fry

Ingredients

  • 250 grams cluster beans (gavar), stringed and ends trimmed
  • Salt to taste
  • 2 tablespoons oil
  • 5-6 garlic cloves, sliced
  • 3-4 spring onion bulbs, sliced
  • Crushed black peppercorns to taste
  • ½ teaspoon light soy sauce
  • ½ teaspoon vinegar
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon red chilli flakes + to sprinkle
  • Toasted white sesame seeds to sprinkle

Method

  1. Heat sufficient water in a deep non-stick pan, add salt and cluster beans and blanch for 4-5 minutes. Drain and transfer in chilled water.
  2. Heat oil in a non-stick pan, add garlic and sauté till light brown.
  3. Add spring onion bulbs, mix and sauté for 1 minute.
  4. Add blanched beans, salt and crushed black peppercorns and mix well.
  5. Add light soy sauce, vinegar, toasted sesame oil and red chilli flakes and toss well.
  6. Transfer into a serving bowl, sprinkle red chilli flakes and toasted sesame seeds and serve.
