Foxtail Mawa Cake

Method

  1. Preheat oven to 180⁰ C.
  2. Break the eggs into a bowl and whisk lightly with a fork.
  3. Take butter in another large bowl, add castor sugar and beat with an electric hand beater till the mixture turns light and fluffy.
  4. Add grated mawa and continue to beat till well combined. Add the beaten eggs in batches and beat well after each addition.
  5. Sift the foxtail millet flour, baking powder and green cardamom powder directly into the bowl and fold in gently till well combined.
  6. Add milk and vanilla essence and mix gently till a smooth batter is formed.  
  7. Pour the batter into silicon loaf mould, tap it a couple of times and place it in the preheated oven and bake for 40-45 minutes.  
  8. Bring the cake out of the oven and allow to cool completely.
  9. De-mould the cake and cut into thick slices. Arrange the slices on a serving plate and serve.
