Ingredients
- Crumbled feta cheese as required
- 3 fresh figs
- 8-12 readymade tart shells
- 1 tablespoon mustard paste
- 3 tablespoons extra virgin olive oil
- 1½ tablespoons lemon juice
- ¼ teaspoon honey
- Crushed black peppercorns to taste
- Salt to taste
- 10-15 rocket leaves, roughly torn
- 2-3 tablespoons toasted and chopped walnuts
- 2-3 tablespoons fresh pomegranate pearls
Method
- Take mustard paste in a bowl, add extra virgin olive oil, lemon juice, honey, crushed black peppercorns and salt and mix well.
- Cut each fig into 8 wedges.
- To make salad, take rocket leaves in a bowl, add figs, walnuts and pomegranate pearls and mix. Drizzle prepared dressing and mix well.
- Arrange tarts shells on a serving platter and put some salad into each shell. Sprinkle feta cheese and serve.
