Feta Salad Tarts

Serve salad a little differently. This delicious salad of fresh figs and dry fruits enhanced with a spicy dressing served in tart shells and sprinkled with feta cheese is a sight to behold.

Ingredients

  • Crumbled feta cheese as required
  • 3 fresh figs
  • 8-12 readymade tart shells
  • 1 tablespoon mustard paste
  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons lemon juice
  • ¼ teaspoon honey
  • Crushed black peppercorns to taste
  • Salt to taste
  • 10-15 rocket leaves, roughly torn
  • 2-3 tablespoons toasted and chopped walnuts
  • 2-3 tablespoons fresh pomegranate pearls

Method

  1. Take mustard paste in a bowl, add extra virgin olive oil, lemon juice, honey, crushed black peppercorns and salt and mix well.
  2. Cut each fig into 8 wedges.
  3. To make salad, take rocket leaves in a bowl, add figs, walnuts and pomegranate pearls and mix. Drizzle prepared dressing and mix well.
  4. Arrange tarts shells on a serving platter and put some salad into each shell. Sprinkle feta cheese and serve.
