Ingredients list for Shrikhand with Caramelised Walnuts
- 3 cups Yogurt
- 2 tablespoons Walnuts , roughly chopped
- 2 tablespoons Sugar
- 3/4 cup Powdered sugar
- 1/4 teaspoon Green cardamom powder
- 1 tablespoon Milk
- a few Saffron strands
Method
- Pour the yogurt into a large piece of muslin cloth, bring the edges together to form a potli. Keep the potli in a strainer kept over a large bowl and let the excess water drain off completely. Keep the bowl in the refrigerator so that the yogurt doesn’t turn sour. This may take 3-4 hours.
- Put the hung yogurt into a sieve kept over another bowl, add powdered sugar and mix till the sugar blends completely with the yogurt and the mixture passes through the sieve into the bowl.
- Heat a non-stick pan, add walnuts and 2 tablespoons sugar and cook stirring continuously till the sugar caramelizes. Transfer the mixture onto a plate lined with butter paper and spread evenly.
- Add green cardamom powder to the yogurt mixture. Take milk in a small bowl, add saffron and mix well. Add this to the yogurt mixture and mix everything well.
- Add half the caramelized walnuts and mix well.
- Transfer the shrikhand into serving bowl, garnish with the remaining caramelized walnuts and serve.
