Ingredients
- 1 Malta orange
- 2 tablespoons chopped dried cranberries
- 2 cups refined flour (maida)
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¼ cup castor sugar
- 1 cup chilled butter, cut into cubes
- 1½ tablespoons white chocolate chips
- Jam to serve
- Whipped cream to serve
Method
- Sift together refined flour and baking powder into a large bowl. Add salt, sugar and zest of Malta orange and mix well.
- Add butter and mix with your fingertips till mixture resembles breadcrumbs.
- Squeeze the juice of Malta and add along with dried cranberries and white chocolate chips and knead with light hands till the mixture comes together and forms a dough. Wrap it in a parchment sheet and refrigerate for 15-20 minutes.
- Meanwhile preheat oven to 180° C.
- Roll the dough into a sheet of 1-inch thickness. Cut into roundels with a round cookie cutter.
- Arrange them on a baking tray, keep the tray in the preheated oven and bake for 20-25 minutes.
- Bring the tray out of the oven and allow to cool slightly.
- Arrange the scones on a serving plate and serve with jam and whipped cream.
