Ingredients
- 1 cup chopped white chocolate
- ¾ cup + 2 tablespoons butter
- ¾ cup condensed milk
- ½ cup yogurt
- 1 teaspoon vanilla essence
- 2 cups refined flour (maida)
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ cup white chocolate chips + for sprinkling
- 2 tablespoons dried cranberries, roughly chopped + for sprinkling
Method
- Preheat oven to 180° C.
- Take white chocolate in a microwave safe bowl, add ¾ cup butter and microwave for 1 minute.
- Take condensed milk in another bowl. Add remaining butter and beat with an electric beater for 1-2 minutes or till the mixture turns pale.
- Add yogurt and continue to beat for 1-2 minutes or till well combined.
- Take the bowl with white chocolate out of the microwave oven and mix till the chocolate melts.
- Add the melted chocolate-butter mixture to the condensed milk mixture and mix well. Add vanilla essence and mix well.
- Sift the refined flour, baking powder and baking soda directly into the above mixture and gently fold in till well combined.
- Add white chocolate chips and dried cranberries and mix with light hands.
- Transfer the batter into a greased and lined 6 inch square baking dish. Level the top and gently tap the dish to remove air bubbles if any. Sprinkle dried cranberries and white chocolate chips on top.
- Place it in the preheated oven and bake for 25-30 minutes.
- Bring the baking dish out of the oven and allow to cool completely.
- Demould the blondies, cut into squares and arrange them on a serving plate. Serve.
