Ingredients

  • 16-20 small button mushrooms
  • 1 cup refined flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika powder
  • Crushed black peppercorns to taste
  • Salt to taste
  • ½ teaspoon dried mixed herbs
  • 1 teaspoon onion powder
  • ½ teaspoon red chilli flakes
  • 2 tablespoons chopped fresh parsley + to garnish
  • Crushed cornflakes as required
  • Oil for deep-frying
  • Grated parmesan cheese to garnish
  • Tartar sauce for serving

Method

  1. Take refined flour in a bowl, add garlic powder, paprika powder, crushed black peppercorns, salt, dried mixed herbs, onion powder, red chilli flakes, fresh parsley and 1¼ cups water and whisk well to make a smooth batter.
  2. Spread cornflakes on a plate.
  3. Dip the mushrooms in refined flour mixture and roll in cornflakes and keep them on a another plate. 
  4. Heat sufficient oil in a kadai. Slide the crumbed mushrooms into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  5. Arrange the fritters on a serving bowl, garnish with parmesan cheese and parsley. Serve  hot with tartar sauce.
