Ingredients
- 1½ tablespoons milk powder
- 2 teaspoons onion powder
- 1 cup semolina (rawa)
- Salt to taste
- 1½ tablespoons butter
- ¾ cup rice flour
- 2 tablespoons parmesan cheese powder
- ½ teaspoon castor sugar
- Oil for deep frying
Method
- Bring 1 cup water and salt to a boil in a deep pan. Add butter and let it melt. Add semolina and mix till well combined. Cover and cook on low heat for 5 minutes.
- Transfer the semolina mixture onto a large plate and allow to cool down to room temperature. Sprinkle ½ cup water and knead to a soft dough.
- To make the spice mix, combine parmesan cheese powder, onion powder, castor sugar, salt and milk powder in a small bowl.
- Transfer some of the semolina mixture into a greased chakli press. Press in chakli sticks on a parchment paper.
- Heat sufficient oil in a kadai. Gently slide in the chakli sticks a few at a time and deep-fry till golden and crisp. Drain on absorbent paper.
- Transfer the chakli sticks into a bowl, sprinkle some of the spice mix and mix gently till each chakli stick is coated with the spice mix.
- Arrange in a serving bowl. Serve.
