Corn And Sprouts Sandwich

Sandwiches are popularly served as a breakfast snack in most homes. And when corn, cheese and sprouts come together between the bread slices they make delectable sandwiches. Served with ketchup and potato chips, makes them all the more enjoyable.

Ingredients

  • ¾ cup boiled and crushed sweetcorn kernels
  • ¾ cup boiled moong sprouts
  • 8 white bread slices
  • 1 tablespoon butter + for applying
  • 1 teaspoon oil
  • 2 green chillies, chopped
  • 1 small green capsicum, finely chopped
  • 1½ tablespoons green chutney
  • ¾ cup grated processed cheese
  • Salt to taste
  • Tomato ketchup to serve

Method

  1. Heat butter and oil in a non-stick pan, add green chillies and sauté for 20 seconds. 
  2. Add green capsicum and mix well. Add crushed sweetcorn and boiled moong sprouts, mix well and saute for 1 minute. 
  3. Take the pan off the heat and transfer the mixture into a large bowl and let it cool down. Add green chutney, processed cheese and salt and mix well.  
  4. Apply butter on one side of all the bread slices. Apply a portion of the mixture on to 4 slices of bread and cover it with the remaining bread slices with the butter side facing down. 
  5. Apply some butter on top of the sandwich. 
  6. Heat an electric griller. Place the sandwich on it and grill for 3-4 minutes. 
  7. Place the sandwiches on the worktop, cut them diagonally in half and arrange on a serving plate.
  8. Serve hot with potato chips, and tomato ketchup.
