Ingredients
- 1 cup boiled sweet corn kernels
- 1 cup grated mixed cheese + for sprinkling
- ½ cup grated mozzarella cheese + for sprinkling
- 1½ tablespoons butter
- 1 tablespoon finely chopped garlic
- 1½ tablespoons refined flour (maida)
- 2 cups milk
- ½ cup chopped spring onion greens + for sprinkling
- Crushed black peppercorns to taste
- ½ teaspoon red chilli flakes
- A pinch of salt
- Nachos to serve
Method
- Preheat oven to 180° C.
- Heat butter in a non-stick pan, add garlic, mix and saute till golden brown. Add refined flour, mix well and saute till fragrant.
- Add milk and cook, whisking continuously, for 1-2 minutes.
- Add mixed cheese, mozzarella cheese, sweet corn kernels and spring onion greens, mix well and cook for 1-2 minutes.
- Add crushed black peppercorns, red chilli flakes and salt, mix well and cook for 1-2 minutes.
- Transfer the mixture into a small oven proof baking dish. Sprinkle mixed cheese, mozzarella cheese and spring onion greens. Place it in the preheated oven and cook for 10-15 minutes or till the cheese melts.
- Serve hot with nachos.
