Ingredients
- 3 teaspoons instant coffee powder
- 2 cups rolled oats
- ¼ cup chopped walnuts
- ¼ cup pumpkin seeds
- ¼ cup sliced almonds
- ¼ cup chopped cashewnuts
- ½ cup puffed quinoa
- 2 tablespoons chia seeds
- ¼ teaspoon green cardamom powder
- ½ teaspoon cinnamon powder
- A pinch of salt
- ¼ cup melted butter
- ¼ cup honey
- Fresh strawberries to serve
- Ripe bananas to serve
- Fresh blueberries to serve
- Fresh mint sprigs for garnish
- Cold milk to serve
Method
- Preheat the oven to 180º C.
- Take rolled oats in a large mixing bowl, add walnuts, pumpkin seeds, almonds and cashewnuts and mix well. Add puffed quinoa and mix. Add coffee powder and mix.
- Add chia seeds, green cardamom powder, cinnamon powder and salt and mix. Add melted butter and honey and mix well. Transfer the mixture onto a lined baking tray and spread it evenly.
- Place the tray in the preheated oven and bake for 20-25 minutes.
- Bring the tray out of the oven and allow to cool completely.
- Once the granola has cooled, gently break it into small pieces and store in an air tight container.
- To serve each portion, take a few pieces of granola in a serving bowl. Vertically halve strawberries. Peel bananas and slice them thinly. Arrange these fruits on top of the granola, add a few blueberries, a few mint sprigs, and pour the milk over them. Serve immediately.
