Cherry Pulao

Ingredients

  • 200 grams fresh cherries, halved and seeded  
  • 1½ cups basmati rice, washed, soaked for 20 minutes and drained
  • 2 tablespoons ghee
  • 4-5 cloves
  • 6-8 black peppercorns
  • 4-5 green cardamoms
  • 2 tablespoons raisins 
  • Salt to taste
  • A pinch of saffron strands
  • Candied cherry slivers for garnish
  • Fresh cherry for garnish

Method

  1. Heat ghee in a deep non-stick pan, add cloves, black peppercorns and green cardamoms, mix and sauté for 1 minute. 
  2. Add cherries, mix and sauté for 1-2 minutes. Add raisins, mix and continue to saute for 1-2 minutes. 
  3. Add drained rice, mix and sauté lightly for 1 minute. Add 3 cups hot water and mix well. Add salt and saffron strands and mix well. Cover and cook on medium heat for 8-10 minutes or till the rice is done and all the water absorbed. 
  4. Transfer the rice onto a serving plate, garnish with candied cherry slivers and a fresh cherry. Serve hot.
