Ingredients
- 1 cup grated cow milk cottage cheese (chenna)
- 5 cups milk
- A few strands of saffron + for garnish
- ½ teaspoon green cardamom powder
- 3½ tablespoons sugar
- Blanched, peeled, and slivered pistachios for garnish
Method
- Heat milk in a deep non-stick pan and cook, stirring continuously, till it reduces to half the original quantity.
- Add saffron and green cardamom powder and mix and cook for 2-3 minutes.
- Add sugar and mix well and cook till the sugar melts completely.
- Add grated cottage cheese, mix and cook on low heat for another 2 minutes.
- Take the pan off the heat and set aside to cool. Transfer into a serving bowl and refrigerate for 1 hour.
- Serve chilled garnished with saffron strands and slivered pistachios.
