Ingredients
- 5-6 white bread slices
- 1 cup cream cheese
- ¼ cup mayonnaise
- 2 tablespoons finely chopped onion
- 2 tablespoons finely chopped carrot
- 2 tablespoons finely chopped green capsicum
- 2 tablespoons finely chopped red capsicum
- 2 tablespoons finely chopped yellow zucchini
- Salt to taste
- Black pepper powder to taste
- Butter for applying
- Few pieces of lettuce leaves to serve
- Cherry tomato halves to serve
- 4-5 black olives, vertically halved
Method
- Combine cream cheese and mayonnaise in a bowl. Add onion, carrot, green capsicum, red capsicum, yellow zucchini, salt and black pepper powder and mix well.
- Trim the edges of the bread slices. Roll the bread slices with a rolling pin. Apply butter on one side of the bread slices. Spread the mixture evenly over the buttered side. Place a cheese slice and tightly roll from one side to the other. Cover with a cling wrap and place it in the refrigerator for 1-2 hours.
- Bring the rolls out of the refrigerator, discard the cling wrap and cut the sandwich rolls in thick discs. Secure it with a toothpick on which lettuce, cherry tomato halves and black olive halves are attached.
- Arrange the sandwich rolls on a serving plate and serve.
