Cheesy Veg Sandwich Rolls

Fun times roll in with these Cheesy Veg Sandwich Rolls. A lovely flavourful spread on bread slices served even more attractively with lettuce, cherry tomato and black olive halves.

Ingredients 

  • 5-6 white bread slices
  • 1 cup cream cheese
  • ¼ cup mayonnaise 
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped carrot
  • 2 tablespoons finely chopped green capsicum
  • 2 tablespoons finely chopped red capsicum
  • 2 tablespoons finely chopped yellow zucchini
  • Salt to taste
  • Black pepper powder to taste 
  • Butter for applying
  • Few pieces of lettuce leaves to serve
  • Cherry tomato halves to serve
  • 4-5 black olives, vertically halved

Method

  1. Combine cream cheese and mayonnaise in a bowl. Add onion, carrot, green capsicum, red capsicum, yellow zucchini, salt and black pepper powder and mix well. 
  2. Trim the edges of the bread slices. Roll the bread slices with a rolling pin. Apply butter on one side of the bread slices. Spread the mixture evenly over the buttered side. Place a cheese slice and tightly roll from one side to the other. Cover with a cling wrap and place it in the refrigerator for 1-2 hours.
  3. Bring the rolls out of the refrigerator, discard the cling wrap and cut the sandwich rolls in thick discs. Secure it with a toothpick on which lettuce, cherry tomato halves and black olive halves are attached.
  4. Arrange the sandwich rolls on a serving plate and serve.
