Ingredients
- 15-20 fresh blueberries + for topping
- 1 cup castor sugar
- 1 cup butter
- 3 eggs
- 1 teaspoon vanilla essence
- 1 cup + 1 tbsp refined flour (maida)
- 1 teaspoon baking powder
Method
- Preheat oven to 180º C.
- Take castor sugar in a large bowl, add butter and beat with an electric beater till light and fluffy.
- Break the eggs, one at a time, into the bowl and continue to beat after each addition till the mixture is well combined. Add vanilla essence along with the third egg and beat well.
- Take the blueberries in a small bowl, add 1 tablespoon refined flour and mix well.
- Sift 1 cup refined flour and baking powder directly into the bowl with butter-sugar mixture.
- Add the blueberries into the butter-sugar mixture as well. Gently fold in till well combined.
- Transfer the mixture into lined muffin moulds, top with a few blueberries and place the mould in the preheated oven and bake for 30-35 minutes.
- Bring the muffin out of the oven and allow to cool completely before serving.
