Blueberry Muffins

The moisture from the blueberries and the soft muffins with a lovely brown crust are such a delightful treat anytime of the day. These muffins taste best when warm.

Method

  1. Preheat oven to 180º C.
  2. Take castor sugar in a large bowl, add butter and beat with an electric beater till light and fluffy. 
  3. Break the eggs, one at a time, into the bowl and continue to beat after each addition till the mixture is well combined. Add vanilla essence along with the third egg and beat well.
  4. Take the blueberries in a small bowl, add 1 tablespoon refined flour and mix well.
  5. Sift 1 cup refined flour and baking powder directly into the bowl with butter-sugar mixture. 
  6. Add the blueberries into the butter-sugar mixture as well. Gently fold in till well combined. 
  7. Transfer the mixture into lined muffin moulds, top with a few blueberries and place the mould in the preheated oven and bake for 30-35 minutes. 
  8. Bring the muffin out of the oven and allow to cool completely before serving.
