Ingredients
- 2 cups refined flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Salt to taste
- 1½ cups buttermilk
- 1 egg
- 8 tablespoons oil
- 4 medium onions
Method
- Sift flour, baking soda, baking powder and salt into a bowl. Add buttermilk and salt and whisk.
- Add the egg and whisk. Add 3 tablespoons of oil and whisk. Add water to adjust the consistency and whisk to a smooth batter.
- Thickly slice the onion.
- Heat 4 tablespoons of oil in one non-stick pan and 1 tsp of oil in another non-stick pan.
- Spread a ladle full of batter thickly in the second pan and cook.
- Add onions to the first pan and saute. Diagonally slice the chilli chicken sausages and add them to this pan. Add mixed herbs and salt, mix, and saute for 2-3 minutes.
- Turn the pancake when the underside is golden and cook the other side similarly. Similarly cook the remaining pancakes.
- Spread the sausage mixture equally over each pancake.
- Garnish with a sprig of curly parsley and serve immediately.
