Avocado Egg Toast

  • 2 avocados
  • 4 white bread slices
  • 4 teaspoons oil
  • 4 eggs
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 lemon, quartered
  • Chopped green chillies for sprinkling
  • Finely chopped onion for sprinkling
  • Finely chopped tomato for sprinkling
  • Chopped fresh coriander leaves for sprinkling
  • Alfa alfa sprouts for sprinkling


  1. Set the toaster on high. Place the bread slices in it and toast till crisp. 
  2. To make each toast, heat 1 teaspoon oil in a small non-stick pan. Break an egg into the pan, sprinkle salt and crushed black peppercorns. Cook for 1-2 minutes. Take the pan off the heat.
  3. Apply some butter on a toasted bread. 
  4. Halve the avocado, discard the seed, scoop out a portion of the avocado over the buttered bread and squeeze the juice of ¼ lemon. Mash the avocado with a fork over the bread and spread it evenly. Sprinkle salt and crushed black peppercorns. Mix it with light hands. 
  5. Sprinkle some green chillies, onion, tomato, some coriander leaves and place some alfa alfa sprouts over it. Place the fried egg on top.
  6. Keep each toast on a separate plate and serve.
