Ingredients
- 4 eggs (anda)
- 4 teaspoons oil
- 4 tablespoons chopped onions
- Salt to taste
- Red chilli powder to sprinkle
- 4 teaspoons chopped fresh coriander leaves
- 4 white bread slices
- Butter as required
- Tomato ketchup for serving
Method
- For each portion, heat 1 teaspoon oil in a shallow non-stick pan. Break 1 egg into the pan and cook for 30 seconds.
- Sprinkle 1 tablespoon onion, salt, red chilli powder and coriander leaves on top.
- Place a slice of bread on the egg and apply butter on top.
- Sprinkle some more red chilli powder on top and cook for 2 minutes on medium heat.
- Flip and cook on other side for 2-3 minutes on medium heat.
- Cut into triangles, place on serving plate and serve hot with tomato ketchup.
