Anda Khandoli

Quick, easy and popular snack from the streets of Kolhapur, Anda Khandoli is essentially made with two ingredients - eggs and bread. The half fried egg topped with a bread slice and then crisp fried and cut into small pieces.

Method

  1. For each portion, heat 1 teaspoon oil in a shallow non-stick pan. Break 1 egg into the pan and cook for 30 seconds.
  2. Sprinkle 1 tablespoon onion, salt, red chilli powder and coriander leaves on top.
  3. Place a slice of bread on the egg and apply butter on top.
  4. Sprinkle some more red chilli powder on top and cook for 2 minutes on medium heat.
  5. Flip and cook on other side for 2-3 minutes on medium heat.
  6. Cut into triangles, place on serving plate and serve hot with tomato ketchup.
