Ingredients
- 1 cup water melon whites chopped
- 1/2 cup coconut grated grated
- Salt to taste
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cumin seeds
- 1 tablespoon sugar
- 3 green chillies chopped
- 1/2 cup yogurt
- 2 teaspoons oil
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon fenugreek seeds
- 2 whole red chillies cut into two
- Coriander leaves for garnishing
Method
- Heat 1 cup water in a non stick pan, add melon pieces, salt and turmeric powder. Cook for five minutes. Drain and set aside.
- Blend together coconut, cumin seeds, sugar, green chillies with two tablespoons water to a smooth paste.
- In a bowl add the melon; add yogurt and the ground paste. Mix well.
- In small non stick pan heat oil, add mustard seeds, fenugreek seeds, and red chillies, sauté for thirty seconds. Add to the above mixture.
- Garnish with chopped coriander leaves and serve cold.
