Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Watermelon Pachadi Recipe

  • Water Melon Whites chopped 1 cup

  • Coconut Grated grated 1/2 cup

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Sugar 1 tablespoon

  • Green chillies chopped 3

  • Yogurt 1/2 cup

  • Oil 2 teaspoons

  • Mustard seeds 1/4 teaspoon

  • Fenugreek seeds 1/4 teaspoon

  • Whole red chillies cut into two 2

  • Coriander leaves for garnishing

Method

Step 1

Heat 1 cup water in anon stick pan, add melon pieces, salt and turmeric powder. Cook for five minutes. Drain and set aside.

Step 2

Blend together coconut, cumin seeds, sugar, green chillies with two tablespoons water to a smooth paste.

Step 3

In a bowl add the melon; add yogurt and the ground paste. Mix well.

Step 4

In small non stick pan heat oil, add mustard seeds, fenugreek seeds, and red chillies, sauté for thirty seconds. Add to the above mixture.

Step 5

Garnish with chopped coriander leaves and serve cold.
