Ingredients
- ½ tablespoon wasabi paste
- 20-25 medium shrimps, cleaned and deveined
- 3 small pizza bases, cut into roundels, grilled to golden brown
- 1 tablespoon oil
- 2-3 spring onion bulbs, chopped
- 4-5 garlic cloves, finely chopped
- 1 inch ginger, finely chopped
- 4-5 fresh red chillies, diagonally sliced + to sprinkle
- 1 tablespoon soya sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- Salt to taste
- Crushed black peppercorns to taste
- 4 teaspoons corn starch slurry
- 1 tablespoon toasted white sesame seeds
- 2 tablespoons freshly chopped spring onion greens
- 1 medium avocado
- ½ lemon
- 3 small pita breads, cut into roundels and grilled to golden brown
- Spring onion greens strips for garnish
Method
- Heat oil in a non-stick pan, add spring onion white, garlic, ginger, red chillies, sauté for a minute. Add prawns and sauté for 1-2 minutes.
- Add soya sauce, fish sauce, oyster sauce, salt and crushed black peppercorns. Mix well. Sauté for 1-2 minutes.
- Add cornstarch slurry. Mix well and sauté for a minute or till the mixture thickens on high heat.
- Sprinkle sesame seeds and sprinkle spring onions greens. Sauté for a minute and take it off the heat.
- Cut an avocado into half, de-seed and scoop out the flesh in a bowl. Squeeze lemon in the bowl and mash the mixture well using a fork.
- Add wasabi paste and mix well. Transfer the mixture in a piping bag.
- Take pizza bases on a serving platter, pipe out the avocado mixture, add a portion of prepared prawns on each base.
- Sprinkle sesame seeds and chopped fresh red chillies on top. Garnish with spring onion greens strips and serve.
