Vegetable Peanut Curry

Mixed vegetables cooked with crushed peanuts and peanut butter in coconut milk. Serve this with hot steamed rice. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 small carrots, peeled, cut into dices and blanched
  • ¾ cup roasted peanuts crushed,
  • 7-8 French beans, stringed, cut into diamonds and blanched
  • ¼ cup green peas
  • ½ medium cauliflower, separated into florets and blanched
  • 2 teaspoons peanut butter
  • ½ tablespoon oil
  • 6-7 garlic cloves, finely chopped
  • 1 inch ginger, finely chopped
  • ½ cup scraped fresh coconut  + for garnishing
  • 1 cup Coconut milk
  • 3 teaspoons curry powder
  • Salt  to taste
  • Black pepper powder to taste

Method

  1. Heat oil in a non-stick pan. Add garlic and ginger and sauté till golden.
  2. Add crushed peanuts, coconut and peanut butter, mix well and sauté on low heat for 2-3 minutes.
  3. Add coconut milk, 1½ cups water and stir to mix. Add curry powder, salt and pepper powder, stir to mix and simmer for 2-3 minutes.
  4. Add carrot, beans, green peas and cauliflower, mix well and bring to a boil.
  5. Serve hot garnished with coconut.
