Sweetcorn Pasta

Whole wheat penne tossed with vibrant veggies in a tangy white sauce, finished with chilli flakes, black pepper, and fresh parsley. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 1 cup whole wheat penne pasta, boiled
  • 2 teaspoons butter
  • 1 teaspoon olive oil
  • 1 tablespoon finely chopped garlic 
  • 1 medium red capsicum, cut into ½ inch pieces
  • 1 medium yellow capsicum, cut into ½ inch pieces
  • 1 medium green capsicum, cut into ½ inch pieces
  • 2 tablespoon tomato ketchup
  • 1/4 broccoli, cut into florets and blanched
  • 1/4 cup sweet corn kernels
  • Salt to taste
  • 1/2 teaspoon red chilli flakes
  • Black pepper powder to sprinkle
  • Fresh parsley sprig for garnish

Method

  1. Heat butter and olive oil in a non-stick wok, add garlic and sauté medium heat till it turns golden and its raw smell disappears.
  2. Add red capsicum, yellow capsicum and green capsicum, mix and sauté for 2-3 minutes. Add white sauce and tomato ketchup, mix well and cook for 1-2 minutes.
  3. Add pasta, mix well and cook for 2-3 minutes. Add broccoli, sweet corn kernels, salt and red chilli flakes, mix well and cook for 2-3 minutes on medium heat.
  4. Transfer into a serving bowl, garnish with black pepper powder and parsley sprig and serve hot.
