Ingredients
- 1 cup whole wheat penne pasta, boiled
- 2 teaspoons butter
- 1 teaspoon olive oil
- 1 tablespoon finely chopped garlic
- 1 medium red capsicum, cut into ½ inch pieces
- 1 medium yellow capsicum, cut into ½ inch pieces
- 1 medium green capsicum, cut into ½ inch pieces
- 2 tablespoon tomato ketchup
- 1/4 broccoli, cut into florets and blanched
- 1/4 cup sweet corn kernels
- Salt to taste
- 1/2 teaspoon red chilli flakes
- Black pepper powder to sprinkle
- Fresh parsley sprig for garnish
Method
- Heat butter and olive oil in a non-stick wok, add garlic and sauté medium heat till it turns golden and its raw smell disappears.
- Add red capsicum, yellow capsicum and green capsicum, mix and sauté for 2-3 minutes. Add white sauce and tomato ketchup, mix well and cook for 1-2 minutes.
- Add pasta, mix well and cook for 2-3 minutes. Add broccoli, sweet corn kernels, salt and red chilli flakes, mix well and cook for 2-3 minutes on medium heat.
- Transfer into a serving bowl, garnish with black pepper powder and parsley sprig and serve hot.
