Ingredients
- 1 cup sweet potato, peeled, grated and soaked in water
- ¼ cup corn kernels, tinned
- 1 cup refined flour (maida)
- 1 egg
- ½ cup milk
- 1 fresh red chilli
- 1 small onion
- 7-8 fresh coriander sprigs + for garnishing
- Salt to taste
- Crushed black peppercorns to taste
- ⅓ cup processed cheese, grated
- Oil for shallow frying
Method
- Put refined flour, egg and milk in a bowl and whisk into a smooth mixture.
- Finely chop the red chilli and add.
- Slice the onion and add.
- Finely chop coriander sprigs and add. Squeeze water from sweet potato and add along with corn kernels, salt, crushed peppercorns and cheese and mix well.
- Heat some oil in a non-stick pan. Place small portions of the prepared mixture in the pan, spread into medium-sized discs and shallow-fry, turning sides, till golden and crisp on both sides. Drain on absorbent paper.
- Serve hot, garnished with coriander sprigs.
