Sweet Potato and Corn Fritters

Ingredients 

  • 1 cup sweet potato, peeled, grated and soaked in water
  • ¼ cup corn kernels, tinned
  • 1 cup refined flour (maida)
  • 1 egg
  • ½ cup milk
  • 1 fresh red chilli
  • 1 small onion
  • 7-8 fresh coriander sprigs + for garnishing  
  • Salt to taste
  •  Crushed black peppercorns to taste
  • ⅓ cup processed cheese, grated
  • Oil for shallow frying

Method

  1. Put refined flour, egg and milk in a bowl and whisk into a smooth mixture.
  2. Finely chop the red chilli and add.
  3. Slice the onion and add.
  4. Finely chop coriander sprigs and add. Squeeze water from sweet potato and add along with corn kernels, salt, crushed peppercorns and cheese and mix well.
  5. Heat some oil in a non-stick pan. Place small portions of the prepared mixture in the pan, spread into medium-sized discs and shallow-fry, turning sides, till golden and crisp on both sides. Drain on absorbent paper.
  6. Serve hot, garnished with coriander sprigs.
