Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Sweet Potato and Corn Fritters Recipe

  • Sweet potato peeled, grated and soaked in water 1 cup

  • Corn kernels tinned ¼ cup

  • Refined flour (maida) 1 cup

  • Egg 1

  • Milk ½ cup

  • Fresh red chilli 1

  • Onion 1 small

  • Fresh coriander sprigs 7-8 + for garnishing

  • Salt to taste

  • Crushed black peppercorns to taste

  • Processed cheese grated 1/3 cup

  • Oil for shallow frying

Method

Step 1

Put refined flour, egg and milk in a bowl and whisk into a smooth mixture.

Step 2

Finely chop red chilli and add.

Step 3

Slice onion and add.

Step 4

Finely chop coriander sprigs and add. Squeeze water from sweet potato and add along with corn kernels, salt, crushed peppercorns and cheese and mix well.

Step 5

Heat some oil in a non-stick pan. Place small portions of the prepared mixture in the pan, spread into medium sized discs and shallow-fry, turning sides, till golden and crisp from both sides. Drain on absorbent paper.

Step 6

Serve hot garnished with coriander sprigs.
