Ingredients list for Sweet Potato and Corn Fritters

  • 1 cup Sweet potato peeled, grated and soaked in water
  • ¼ cup Corn kernels tinned
  • 1 cup Refined flour (maida)
  • 1 Egg
  • ½ cup Milk
  • 1 Fresh red chilli
  • 1 small Onion
  • + for garnishing Fresh coriander sprigs 7-8
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1/3 cup Processed cheese grated
  • for shallow frying Oil


  1. Put refined flour, egg and milk in a bowl and whisk into a smooth mixture.
  2. Finely chop red chilli and add.
  3. Slice onion and add.
  4. Finely chop coriander sprigs and add. Squeeze water from sweet potato and add along with corn kernels, salt, crushed peppercorns and cheese and mix well.
  5. Heat some oil in a non-stick pan. Place small portions of the prepared mixture in the pan, spread into medium sized discs and shallow-fry, turning sides, till golden and crisp from both sides. Drain on absorbent paper.
  6. Serve hot garnished with coriander sprigs.
