Ingredients list for Sweet Potato and Corn Fritters
- 1 cup Sweet potato peeled, grated and soaked in water
- ¼ cup Corn kernels tinned
- 1 cup Refined flour (maida)
- 1 Egg
- ½ cup Milk
- 1 Fresh red chilli
- 1 small Onion
- + for garnishing Fresh coriander sprigs 7-8
- to taste Salt
- to taste Crushed black peppercorns
- 1/3 cup Processed cheese grated
- for shallow frying Oil
Method
- Put refined flour, egg and milk in a bowl and whisk into a smooth mixture.
- Finely chop red chilli and add.
- Slice onion and add.
- Finely chop coriander sprigs and add. Squeeze water from sweet potato and add along with corn kernels, salt, crushed peppercorns and cheese and mix well.
- Heat some oil in a non-stick pan. Place small portions of the prepared mixture in the pan, spread into medium sized discs and shallow-fry, turning sides, till golden and crisp from both sides. Drain on absorbent paper.
- Serve hot garnished with coriander sprigs.
