Sweet Mango Pulao A delicious and easy rice dish made with fragrant saffron and sweet mangoes. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 22 Feb 2016 in Recipes Veg New Update Main Ingredients Basmati rice, Raw Mangoes Cuisine Maharashtrian Course Desserts Prep Time 41-50 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Sweet Mango Pulao 2 cups Basmati rice 2 medium Raw Mangoes 25-30 Raisins 20 Almonds 12 Cashewnuts 4 tablespoons Ghee 1/2 teaspoon Green cardamom powder 1/4 teaspoon Nutmeg powder 1/2 cup Milk a pinch Saffron (kesar) 1/2 cup Sugar Method Wash rice twice and soak in just enough water to cover it for half an hour. Drain. Wash, peel and chop mangoes into cubes. Grind half of the mango cubes to a puree. Wash and pat dry raisins. Slice almonds and halve cashewnuts. Heat ghee in a deep pan and gently fry raisins. Drain and keep aside. In the same pan add rice and sauté gently for two to three minutes. Add green cardamom powder and nutmeg powder. Boil milk, saffron and sugar. Add to rice with two and a half cups of water. Add raisins, almonds, cashewnuts and mango pulp. Stir once. Cover and cook on low heat till done. Allow standing time of five minutes. Mix in mango cubes. Serve hot.
