Ingredients list for Suji Pancakes

  • 1 cup Semolina (suji)
  • 1 tablespoon Rice flour
  • 1/2 cup Yogurt
  • 3 tablespoons Carrot grated
  • 3 tablespoons Spinach shredded
  • to taste Salt
  • 1 teaspoon Cumin seeds
  • to taste Black peppercorns cruhsed
  • to shallow fry Oil
  • to serve Coconut chutney
  • to serve Tomato chutney

Method

  1. Mix the semolina and rice flour in a bowl, add yogurt and mix well. Cover and set aside overnight or for at least 6-8 hours.
  2. Add carrot, spinach, salt, cumin seeds and crushed peppercorns and mix well. You can add a little water if required to adjust the consistency.
  3. Drizzle little oil on a non-stick tawa. Spread small spoonful of batter to make 3 pancakes and spread slightly. Drizzle some oil and allow the underside to cook. Flip and cook the other side similarly. Make more pancakes similarly.
  4. Transfer them on serving plates and serve hot with coconut chutney and tomato chutney.
