Ingredients list for Spinach Soy Granules
- 1 1/2 cup Soya Granules
- 2 cups Milk
- 5 cloves Garlic
- 2 Whole dry red chilli
- 2 medium Onions finely chopped
- 1 inch piece Ginger finely chopped
- 8 Mushrooms grated
- 2 bunches Spinach shredded
- 2 teaspoons Oil
- 1 teaspoon Cumin seeds
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 1/4 teaspoon Coriander-cumin powder
- 1/2 teaspoon Red chilli powder
- 1 tablespoon Lemon juice
Method
- Soak soy granules in milk for fifteen minutes. Peel garlic and crush them with whole red chillies in a mortar with the pestle. Peel, wash and finely chop onion and ginger. Wash and grate mushrooms. Clean spinach, wash thoroughly and shred.
- Heat the oil in pan. Add cumin seeds, crushed garlic and red chillies. When the cumin seeds start to crackle, add chopped onion and fry till light brown. Add grated mushrooms, chopped ginger and shredded spinach. Stir well and sauté on high heat for two minutes.
- Add salt and mix well. Add the soaked soy granules, turmeric powder, cumin-coriander powder, red chilli powder. Stir well. If required add three fourths cup of water. Cover and cook on high heat for two minutes then on medium heat for eight minutes. Before serving add the lemon juice and mix well.
