Ingredients
- 1 cup boiled and shredded chicken
- 8 multigrain bread slices
- 1 small cabbage, shredded
- 2 medium carrots, peeled and cut into thin strips
- 2 pickled jalapenos, chopped
- Crushed black peppercorns to taste
- Salt to taste
- ¼ cup mayonnaise
Method
- Put chicken, cabbage, carrots, jalapenos, crushed peppercorns, salt and mayonnaise in a bowl and mix well.
- Place a portion of chicken slaw over 4 bread slices, sprinkle crushed peppercorns on top and cover with remaining bread slices.
- Cut into fingers and serve immediately with French fries.
