Ingredients list for Spicy Caribbean Chicken Skewers
- 250 grams Boneless chicken cut into cubes
- 2-3 Birds eye chillies finely chopped
- 2 tablespoons Orange juice
- Juice of 1 lemon
- 2 tablespoons Rum Dark
- 2 tablespoons Soy sauce
- 1 inch Ginger finely chopped
- to taste Crushed black peppercorns
- to taste Salt
- 1 tablespoon Garlic chopped
- 1 teaspoon Fennel seeds (saunf)
- 1 tablespoon Vinegar
- for greasi for basting Oil
- for garnishing Spring onion greens chopped
Method
- Take orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add chicken and mix well. Refrigerate to marinate for 2 hours.
- Preheat an electric griller and grease with some oil.
- Skew marinated chicken cubes onto the satay sticks and reserve the leftover marinade for basting.
- Place the skewers on preheated griller and grill, rotating the sticks and basting with the reserved marinade and some oil, till golden from all sides and fully cooked.
- Serve hot garnished with spring onion greens.
