Ingredients
- 10-15 chicken wings
- ½ teaspoon dried mango powder (amchur)
- ½ teaspoon chaat masala
- ½ fresh teaspoon red chilli powder
- 1 teaspoon garlic, chopped
- 1 sprig fresh thyme
- 1 teaspoon oil + for drizzling
- 1 tablespoon lemon juice
- 1 tablespoon tamarind water
- Salt to taste
- 1 tablespoon black peppercorns, crushed
- 2-3 charcoal pieces
- 1 tablespoon butter
- 1 clove
Method
- Take chicken wings in a bowl, add dried mango powder, chaat masala, red chilli powder, garlic, thyme, 1 tbsp oil, lemon juice, tamarind water, salt and crushed black peppercorns and mix well. Create a well in the centre and place a stainless steel bowl.
- Heat charcoal pieces till they turn red. Put them into the stainless steel bowl. Add butter and immediately cover the bowl with a lid to trap the smoke. Seal any perforation on the lid with a clove. Set aside for 5-7 minutes.
- Heat a non-stick pan, place the chicken wings in a single file, drizzle oil and cook till the underside is a light golden brown. Flip them, cover the pan and cook on medium heat for 6-7 minutes or till the chicken is completely cooked.
- Arrange them on a serving platter and serve hot.
