Smoky Chicken Wings

Ingredients 

  • 10-15 chicken wings
  • ½ teaspoon dried mango powder (amchur)
  • ½ teaspoon chaat masala
  • ½ fresh teaspoon red chilli powder
  • 1 teaspoon garlic, chopped
  • 1 sprig fresh thyme
  • 1 teaspoon oil + for drizzling
  • 1 tablespoon lemon juice
  • 1 tablespoon tamarind water
  • Salt to taste
  • 1 tablespoon black peppercorns, crushed
  • 2-3 charcoal pieces
  • 1 tablespoon butter
  • 1 clove

Method

  1. Take chicken wings in a bowl, add dried mango powder, chaat masala, red chilli powder, garlic, thyme, 1 tbsp oil, lemon juice, tamarind water, salt and crushed black peppercorns and mix well. Create a well in the centre and place a stainless steel bowl.
  2. Heat charcoal pieces till they turn red. Put them into the stainless steel bowl. Add butter and immediately cover the bowl with a lid to trap the smoke. Seal any perforation on the lid with a clove. Set aside for 5-7 minutes.
  3. Heat a non-stick pan, place the chicken wings in a single file, drizzle oil and cook till the underside is a light golden brown. Flip them, cover the pan and cook on medium heat for 6-7 minutes or till the chicken is completely cooked.
  4. Arrange them on a serving platter and serve hot.
