Ingredients list for Shakshouka
- 1/2 medium Red bell pepper chopped
- 1/2 medium Yellow bell pepper chopped
- 1/2 medium Green capsicum chopped
- 2 tablespoons Oil
- 1 medium Onion finely chopped
- 1 tablespoon Garlic chopped
- 1 medium Tomato finely chopped
- 1 teaspoon Red chilli powder
- 2 teaspoons Cumin powder
- to taste Salt
- 4 Eggs
- 1/2 cup Feta cheese crumbled
- for garnishing Fresh coriander leaves Chopped
Method
- Heat oil in a non-stick pan. Add onion, mix and sauté till golden. Add garlic and mix well.
- Reduce the heat, add tomato and mix well. Add some water and cook for a minute.
- Add the red bell pepper, yellow bell pepper, green capsicum and some water, mix and cook for 4-5 minutes.
- Add chilli powder and cumin powder, mix and cook on low heat. Add salt and mix well.
- Create some space in the pan. Add eggs in the centre and let them poach them. Cover and cook on low heat for 5-7 minutes.
- Garnish with feta cheese and chopped coriander leaves and serve hot.
