Punjabi food is wholesome and full of rustic flavour. The custom of cooking in community ovens or tandoors prevails in rural pockets even today. The cuisine is characterised by a profusion of dairy products in the form of malai, paneer and dahi. The dals are a speciality of this type of cuisine, made of whole pulses like black gram, green gram and Bengal gram.  They are cooked on slow fire, often simmered for hours till they turn creamy and then flavoured with spices and rounded off with malai for that rich finish. The food is simply delicious.
The most unique thing about cooking in a tandoor is the smoky flavour that the food gets making it tastier. Moreover it is a healthy way of cooking since minimum fat is required and the food generally gets cooked in its own juices thus retaining its natural flavours. Besides it is not only easy to digest, it is also very hygienic.  In conclusion one can safely say that it is through tandoori cooking that Indian cuisine first got globally acknowledged.

Ingredients for Sesame Dal Recipe

  • White sesame seeds 1 teaspoon

  • Sesame seeds (black) 1 teaspoon

  • Split Bengal gram (chana dal) soaked 1/4 cup

  • Split black gram skinless (dhuli urad dal) soaked 2 tablespoons

  • Split pigeon pea (toor dal/arhar dal) soaked 1/4 cup

  • Split green gram skinless (dhuli moong dal) soaked 2 tablespoons

  • Split green gram with skin (chilkewali moong dal) soaked 1/4 cup

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Tomato 1 medium

  • Oil 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Onions chopped 2 medium

  • Red chilli powder 1 teaspoon

Method

Step 1

Put chana dal, toor dal, chilkewali moong dal, dhuli moong dal, dhuli urad dal, salt, turmeric powder and 2½ cups water in a pressure cooker and cook under pressure for 3 whistles. Reduce heat and cook for 15 minutes.

Step 2

Cut tomato into small cubes.Heat oil in a non stick pan, add cumin seeds, white sesame seeds and black sesame seeds and sauté till they splutter. Add onions and sauté till well browned.

Step 3

Add tomato and sauté for a minute. Add red chilli powder and mix well and sauté till tomato becomes pulpy.

Step 4

Open the lid of the cooker when the pressure reduces, add the onion-tomato tempering and mix well.

Step 5

Transfer into a serving bowl and serve hot sprinkled with a little black and white sesame seeds with rice or roti or parantha.
