Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Safed Aloo Recipe

  • Potatoes boiled and peeled cut into 1 inch cubes 4 medium

  • Almonds 1 tablespoon

  • Poppy seed (khuskhus) paste 1 tablespoon

  • Khoya/mawa 1 1/2 tablespoons

  • Yogurt 1/2 cup

  • Oil 2 tablespoons

  • Ginger grated 1 inch piece

  • Salt to taste

  • Lemon juice 1 teaspoon

  • Green cardamom powder 1/2 teaspoon

  • Button red chillies (bor mirchi) 5-6


Step 1

Grind together almonds, poppy seeds and mawa together. Add this paste to yogurt and mix well. Heat one tablespoon oil in a kadai, add ginger and sauté for half a minute.

Step 2

And potatoes and sauté for a minute. Add the yogurt mixture and salt and cook till the gravy thickens. Add lemon juice and green cardamom powder and mix gently.

Step 3

Heat the remaining oil and add the button chillies. Sauté for half a minute and immediately add to the potatoes and cover to retain the flavours. Serve hot.
