Stuffed Capsicum

Ingredients 

  • 4 medium mixed coloured capsicum 
  • 1 cup paneer (cottage cheese), grated
  • 1 tablespoon oil
  • 1 teaspoon garlic, chopped
  • 1 medium onion, finely chopped
  • ¼ cup sweet corn kernels, boiled
  • ¼ cup green peas
  • 1 medium carrot, grated
  • 1 tablespoon red chilli sauce
  • Salt to taste
  • ¼ cup processed cheese, grated

Method

  1. Heat oil in a nonstick pan. Add garlic, once the garlic turns golden brown, add onions and sauté till golden brown.
  2. Add corn, green peas and carrot, sauté for 2-3 minutes. Add cottage cheese, and red chilli sauce, and mix well. Add salt and mix well. Cook for 2-3 minutes. Take the pan off the heat and set aside.
  3. Trim the base and the top of the capsicums and remove the seeds to make a cavity. Reserve the tops.
  4. Add the processed cheese to the cottage cheese mixture and mix well.
  5. Preheat the oven to 180˚C
  6. Brush oil on capsicums and tops arrange on baking tray and stuff the prepared stuffing. Cover with the tops.
  7. Bake in the preheated oven for 10-15 minutes.
  8. Serve hot.
