Ingredients
- 4 medium mixed coloured capsicum
- 1 cup paneer (cottage cheese), grated
- 1 tablespoon oil
- 1 teaspoon garlic, chopped
- 1 medium onion, finely chopped
- ¼ cup sweet corn kernels, boiled
- ¼ cup green peas
- 1 medium carrot, grated
- 1 tablespoon red chilli sauce
- Salt to taste
- ¼ cup processed cheese, grated
Method
- Heat oil in a nonstick pan. Add garlic, once the garlic turns golden brown, add onions and sauté till golden brown.
- Add corn, green peas and carrot, sauté for 2-3 minutes. Add cottage cheese, and red chilli sauce, and mix well. Add salt and mix well. Cook for 2-3 minutes. Take the pan off the heat and set aside.
- Trim the base and the top of the capsicums and remove the seeds to make a cavity. Reserve the tops.
- Add the processed cheese to the cottage cheese mixture and mix well.
- Preheat the oven to 180˚C
- Brush oil on capsicums and tops arrange on baking tray and stuff the prepared stuffing. Cover with the tops.
- Bake in the preheated oven for 10-15 minutes.
- Serve hot.
