Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for SPROUTS PAV BHAJI - skk Recipe

  • Mixed sprouts (moong, moth, chana) 1 1/2 cups

  • Pav bhaji masala 2 tablespoons

  • Pavs 8

  • Small cauliflower roughly chopped 1

  • Medium green capsicum roughly chopped 1

  • Green peas 1/4 cup

  • Oil 1 tablespoon

  • Butter 4 tablespo For topping

  • Medium onions finely chopped 2 + to serve

  • Green chllies finely chopped 2

  • Ginger-garlic paste 1 tablespoon

  • Medium tomatoes finely chopped 2

  • Salt to taste

  • Red chilli powder 1 tablespoon

  • Fresh coriander leaves chopped 2 tablespo to garnish

  • Lemon wedges to serve

Method

Step 1

Heat oil and 2 tbsps butter in a deep non-stick pan, add onions and saute till translucent.

Step 2

Add green chillies, ginger-garlic paste, mix well and saute till raw smells disappear. Add tomatoes, mix and saute till they become pulpy.

Step 3

Add salt and mix well. Add red chilli powder, mix and saute for a minute. Add cauliflower and mix well. Add 2 tbsps butter and mix well.

Step 4

Add sprouts and mix well. Add green capsicum, green peas, pav bhaji masala, coriander leaves and salt and mix. Add ½ cup water and mix, cover and cook for 3-4 minutes.

Step 5

Mash the cooked mixture with a masher and mix. Remove the pan from heat and set aside.

Step 6

Melt some butter on a non-stick tava. Halve each pav horizontally without cutting through and place it on the tava. Press lightly on each side till it turns crisp.

Step 7

Place the pavs on one side of each serving dish. Place some bhaji on the other side, garnish with coriander leaves and butter, and serve hot onions and lemon wedges.
