Ingredients list for Rice Noodle Fritters

  • 200 grams Rice vermicelli
  • for deep-frying Oil
  • 1-2 Fresh red chillies finely chopped
  • 1 teaspoon Fennel seeds (saunf) roasted and crushed
  • 1 teaspoon Cumin seeds roasted and crushed
  • to taste Crushed black peppercorns
  • to taste Salt
  • 1 small Onion finely chopped
  • 1 Egg white
  • to serve Sweet chilli sauce


  1. Take vermicelli in a bowl. Add warm water, cover with cling film and keep till vermicelli softens.
  2. Heat sufficient oil in a pan.
  3. Strain the soaked vermicelli into a bowl and chop roughly.
  4. Add red chillies, crushed fennel seeds, crushed cumin seeds, crushed peppercorns, onion and salt and mix. Add egg white and mix well.
  5. Put spoonful of vermicelli mixture directly into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
  6. Serve hot with sweet chilli sauce.
