Ingredients list for Rice Noodle Fritters
- 200 grams Rice vermicelli
- for deep-frying Oil
- 1-2 Fresh red chillies finely chopped
- 1 teaspoon Fennel seeds (saunf) roasted and crushed
- 1 teaspoon Cumin seeds roasted and crushed
- to taste Crushed black peppercorns
- to taste Salt
- 1 small Onion finely chopped
- 1 Egg white
- to serve Sweet chilli sauce
Method
- Take vermicelli in a bowl. Add warm water, cover with cling film and keep till vermicelli softens.
- Heat sufficient oil in a pan.
- Strain the soaked vermicelli into a bowl and chop roughly.
- Add red chillies, crushed fennel seeds, crushed cumin seeds, crushed peppercorns, onion and salt and mix. Add egg white and mix well.
- Put spoonful of vermicelli mixture directly into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
- Serve hot with sweet chilli sauce.
