Ingredients list for Rajasthani Kadhi-SK Khazana
- 1 1/2 cups Sour yogurt
- 1/4 cup Gram flour (besan)
- 1 tablespoon Ginger-garlic-green chilli paste
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 3 tablespoons Ghee
- 1 inch Cinnamon
- 3-4 Cloves
- 1 Bay leaf
- 6-8 Black peppercorns
- 1/2 teaspoon Fenugreek seeds (methi dana)
- 1 teaspoon Cumin seeds
- a large pi Asafoetida (hing)
- 1 tablespoon Ginger chopped
- 2 Medium onions sliced
- to garnish Fresh coriander sprig
Method
- Whisk together yogurt, gram flour, ginger-garlic-green chilli paste and salt and whisk together. Add turmeric powder and chilli powder and whisk again.
- Heat ghee in a deep non-stick pan. Add cinnamon, cloves, bay leaf, peppercorns, fenugreek seeds, cumin seeds, asafoetida, ginger and onions, mix and sauté till onions turn translucent.
- Add yogurt mixture and mix well. Add 2 cups water and mix again. Add salt, mix and bring to a boil.
- Garnish with coriander sprig and serve hot with steamed rice.
