Ingredients list for Quinoa and Vegetable Pulao
- 1 cup Quinoa soaked for 1 hour
- 7-8 Button mushrooms
- 1/4 cup Green peas
- 1 1/2 tablespoons Oil
- 2 Spring onion bulbs with stems
- 1 teaspoon Cumin seeds
- 4-5 Cloves
- 8-9 Garlic cloves
- 4 Green chillies
- 2 cups Vegetable stock
- to taste Salt
- 1 cup Milk
- for garnish Micro greens
Method
- Heat oil in a non-stick pan.
- Slice spring onion bulbs. Reserve the stems.
- Add cumin seeds, cloves and garlic cloves to the pan.
- Slit green chillies without cutting through and add alongwith spring onion bulbs and saute well.
- Chop spring onion stems and add.
- Quarter mushrooms and add. Toss and saute well.
- Add quinoa and mix well. Add vegetable stock and salt, mix and cook till the mixture come to a boil.
- Add green peas and mix well. Add milk, mix, cover and cook on medium heat till fully done.
- Garnish with micro greens and serve hot.
