By Sanjeev Kapoor 23 Oct 2020 in Recipes Course New Update Main Ingredients Quinoa, Carrot Cuisine Fusion Course Rice Prep Time 21-25 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Quinoa Pulao with Mixed Vegetables 1½ clove Quinoa soaked for 15-20 minutes 1 medium Carrot peeled, cut into diamonds and blanched 6-8 baby corn cut into diamonds and blanched 1 small head Broccoli florets separated and blanched 2 tablespoons Ghee 1 teaspoon Cumin seeds 4-5 Black peppercorns 3-4 Cloves 3 tablespoons Yogurt to taste Salt as required mixed micro greens Method Heat 1 tablespoon ghee in a non-stick pan. Add cumin seeds, peppercorns and cloves and sauté till fragrant. Add quinoa, mix and cook for 2-3 minutes. Add yogurt and mix. Add salt, mix and cook on high heat for 3-4 minutes or till mixture dries. Add 3 cups water, mix and bring to boil. Cover and cook till quinoa is done. Heat remaining ghee in another non-stick pan. Add carrot, baby corn and broccoli, toss and cook for 1 minute. Place a medium size cookie cutter in the center of a serving platter. Put cooked quinoa into the cookie cutter and place sautéed vegetables and micro greens on top. Remove the cookie cutter carefully.
