Ingredients list for Quinoa Pulao with Mixed Vegetables
- 1½ clove Quinoa soaked for 15-20 minutes
- 1 medium Carrot peeled, cut into diamonds and blanched
- 6-8 baby corn cut into diamonds and blanched
- 1 small head Broccoli florets separated and blanched
- 2 tablespoons Ghee
- 1 teaspoon Cumin seeds
- 4-5 Black peppercorns
- 3-4 Cloves
- 3 tablespoons Yogurt
- to taste Salt
- as required mixed micro greens
Method
- Heat 1 tablespoon ghee in a non-stick pan. Add cumin seeds, peppercorns and cloves and sauté till fragrant. Add quinoa, mix and cook for 2-3 minutes.
- Add yogurt and mix. Add salt, mix and cook on high heat for 3-4 minutes or till mixture dries.
- Add 3 cups water, mix and bring to boil. Cover and cook till quinoa is done.
- Heat remaining ghee in another non-stick pan. Add carrot, baby corn and broccoli, toss and cook for 1 minute.
- Place a medium size cookie cutter in the center of a serving platter. Put cooked quinoa into the cookie cutter and place sautéed vegetables and micro greens on top. Remove the cookie cutter carefully.
- Serve hot.
