Ingredients list for Quinoa Pulao with Mixed Vegetables

  • 1½ clove Quinoa soaked for 15-20 minutes
  • 1 medium Carrot peeled, cut into diamonds and blanched
  • 6-8 baby corn cut into diamonds and blanched
  • 1 small head Broccoli florets separated and blanched
  • 2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 4-5 Black peppercorns
  • 3-4 Cloves
  • 3 tablespoons Yogurt
  • to taste Salt
  • as required mixed micro greens

Method

  1. Heat 1 tablespoon ghee in a non-stick pan. Add cumin seeds, peppercorns and cloves and sauté till fragrant. Add quinoa, mix and cook for 2-3 minutes.
  2. Add yogurt and mix. Add salt, mix and cook on high heat for 3-4 minutes or till mixture dries.
  3. Add 3 cups water, mix and bring to boil. Cover and cook till quinoa is done.
  4. Heat remaining ghee in another non-stick pan. Add carrot, baby corn and broccoli, toss and cook for 1 minute.
  5. Place a medium size cookie cutter in the center of a serving platter. Put cooked quinoa into the cookie cutter and place sautéed vegetables and micro greens on top. Remove the cookie cutter carefully.
  6. Serve hot.
