Ingredients list for Quinoa Lemon Rice - SK Khazana
- 3 cups Quinoa cooked
- 1 tablespoon Lemon juice
- 2 tablespoons Oil
- 1/4 teaspoon Raw peanuts
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Bengal gram (chana)
- 1/2 teaspoon Split black gram skinless (dhuli urad dal)
- 2 Dried red chillies broken
- 7-8 Curry leaves
- 1/2 teaspoon Turmeric powder
- to taste Salt
- for garnish Fresh coriander sprigs
Method
- Heat oil in a non-stick pan on medium heat, add peanuts and sauté for 2 minutes. Add mustard seeds, split Bengal gram, split black gram , broken red chillies. Sauté for a few seconds.
- Add curry leaves and turmeric powder and mix well. Add cooked quinoa and mix well. Add salt, mix well and cook for 3-4 minutes.
- Add lemon juice and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
