Ingredients list for Puri Bhaji Spring Roll

  • as required Whole wheat flour (atta) dough
  • 3-4 medium Potatoes boiled, peeled and mashed
  • + deep frying Oil 1 tablespoon + foe greasing
  • 5-7 Curry leaves
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1-2 Green chillies finely chopped
  • ¼ teaspoon Turmeric powder
  • to taste Salt
  • 1 tablespoon Freshly chopped coriander leaves


  1. Heat oil in a non-stick pan. Add curry leaves, mustard seeds and cumin seeds and let mustard seeds splutter. Add green chillies and turmeric powder and sauté for 30 seconds.
  2. Add potatoes, mix and cook for 1 minute. Add salt and mix. Add coriander leaves and mix well. Remove from heat and cool.
  3. Divide the dough into equal portions and shape them into balls.
  4. Grease the worktop with some oil, place each ball and roll out to a thin disc.
  5. Divide the potato mixture into equal portions and put a portion of potato mixture in the centre of each disc, fold in the four sides and roll.
  6. Heat sufficient oil in a kadai. Deep-fry each spring roll in hot oil till golden and crisp. Drain on absorbent paper.
  7. Serve hot.
