Ingredients
- 200 grams prawns, steamed
- 100 grams pomelo, peeled
- 100 grams tomatoes, diced
- 100 grams spring onions, sliced
- 50 grams coconut, shredded
- 1 medium onion, sliced
- 1 stalk lemon grass, only the soft part
Dressing
- 1 tablespoon red chilli paste
- 2 tablespoons extra virgin olive oilÂ
- A handful basil leaves, shredded
- 2 tablespoons jaggery water
- 2 tablespoons peanuts/hazelnuts
- Salt to taste
- 1 tablespoon lemon juice
Method
- In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste.
- Add the shredded basil and season with salt.
- In another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.
- Serve with a sprinkling of roasted peanut and hazelnut.
