Ingredients list for Prawn and Pomelo Salad
- 200 grams Prawns steamed
- 100 grams Pomelo peeled
- 100 grams Tomatoes diced
- 100 grams Spring onions sliced
- 50 grams Coconut shredded
- 1 medium Onion sliced
- 1 stalk Lemon grass only the soft part
- Dressing
- 1 tablespoon Red chilli paste
- 2 tablespoons Olive oil extra virgin
- a handful Basil leaves shredded
- 2 tablespoons Jaggery water
- 2 tablespoons Peanuts/Hazelnuts
- to season Salt
- 1 tablespoon Lemon juice
Method
- In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste.
- Add the shredded basil and season with salt.
- In another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.
- Serve with a sprinkling of roasted peanut and hazelnut.
