Prawn and Pomelo Salad

A bold and zesty prawn and pomelo salad tossed with coconut, herbs, and a sweet-spicy jaggery-chilli dressing, finished with crunchy nuts. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 200 grams prawns, steamed
  • 100 grams pomelo, peeled
  • 100 grams tomatoes, diced
  • 100 grams spring onions, sliced
  • 50 grams coconut, shredded
  • 1 medium onion, sliced
  • 1 stalk lemon grass, only the soft part

Dressing

  • 1 tablespoon red chilli paste
  • 2 tablespoons extra virgin olive oil 
  • A handful basil leaves, shredded
  • 2 tablespoons jaggery water
  • 2 tablespoons peanuts/hazelnuts
  • Salt to taste
  • 1 tablespoon lemon juice

Method

  1. In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste.
  2. Add the shredded basil and season with salt.
  3. In another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.
  4. Serve with a sprinkling of roasted peanut and hazelnut.
